Perfectly Sweet Blueberry Eccles Cake:
Ingredients:
- 3 large sheets of filo pastry - filo pastry has nearly ten times less fat in it than puff pastry
- 40g/1oz low fat margarine, melted - there are now many varieties of low fat butter alternatives available, some of which give fantastic results and taste very similar to real butter
- 150g/3oz blueberries - packed full of anti-oxidants to help fight off oxygen free radicals in your body. Oxygen free radicals are bi-products of your metabolism and are thought to be the main culprit behind aging
- A pinch of arrowroot - once revered by the ancient Mayans and other inhabitants of Central America as an antidote for poison-tipped arrows, the herb is mainly used today to soothe the stomach
- 2 tbsp Perfect Sweet
- Perfect Sweet - to sprinkle on top

Method:
- Preheat the oven to 220 0C/425 0F/Gas 7
- Brush the pastry sheets with melted margarine
- Take a small round bottomed oven-proof pan or dish and place on the hob or in the oven until hot
- Line the pan or dish with the sheets of pastry, ensuring the corners are at slightly different angles to one another and allowing the edges to flop over the sides
- Place the blueberries on top and sprinkle with arrowroot and two tablespoons of Perfect Sweet
- Drizzle with half the melted margarine
- Brush the overhanging edges with the rest of the margarine and fold them over to form a seal
- Prick the top pastry with a knife or fork
- Bake in the oven for 6-8 minutes
- Dust with Perfect Sweet and serve at once
