PerfectSweet Chocolate Cookies:
Makes approx
16 cookies
You will need:
- An electric mixer
- A rubber spatula
- A scone tray lined with
baking paper

Ingredients:
- 60g unsalted butter
- 35g (2 tablespoons) Perfect
Sweet
- 1 teaspoon lemon zest
- 1 egg
- 90g (3/4 cup) plain flour
- 1/4 teaspoon bi-carbonated
soda
- 17g (1 tablespoon) cocoa
powder
- 1/4 teaspoon vanilla extract
- Chocolate drops (if desired)
Method:
- Pre heat oven to 2000C
- Cream together unsalted butter, Perfect SweetTM and lemon zest until butter starts changing colour
- Add egg and mix with spatula
- Sieve flour, bi-carbonated soda and cocoa powder into batter until mixed
- Add vanilla extract
- Drop by tablespoonfuls onto baking paper leaving enough room for biscuits to spread
- Push down with a fork
- Bake at 200C for 10-12 minutes
- Allow to cool on tray before serving
