Perfectly Sweet Devon Flat Biscuits:
Makes 24.
Ingredients:
- 225g / 8oz Wholemeal self-raising flour - wholemeal flour has a higher fibre content than plain white flour. Fibre is thought to have several health benefits; one of which is the fact it slows down the release of energy from foods, meaning you feel fuller for longer and are less likely to snack
- 110g / 4oz Perfect Sweet
- 100ml / 3 fl. oz Elmlea Double Cream Substitute - 11g less fat per 100ml than normal double cream
- 1 tsp salt
- 1 Egg, beaten - a great source of natural protein
- 1 Tablespoon of semi skimmed milk - much less fat than whole milk

Method:
- Pre-heat oven to 220 0C / 425 0F / Gas 7.
- Mix the flour and Perfect Sweet together. Stir in the cream, egg and enough milk to make a stiff dough
- If the dough feels at all sticky, cover and place in the refrigerator to firm up
- Roll the dough out on a lightly floured surface until about 0.75 cm (one-third inch) thick, then cut into 8 cm (3 inch) rounds using a cutter. Put onto greased baking sheets and bake for 8-10 minutes until a light golden brown. Carefully transfer to wire racks to cool
