PerfectSweet Sunflower Seed Biscuits:
Makes
approx 15 biscuits.
You
will need:
- An electric mixer
- A rubber spatula
- A cookie sheet lined with baking
paper
Ingredients:
- 60g unsalted butter
- 35g (2 tablespoons) Perfect
Sweet
- 1 teaspoon lemon zest
- 1 teaspoon orange rind
- ¼ cup unsweetened shredded
coconut
- 1 small egg
- 90g (¾cup) plain flour
- ¼ cup toasted sunflower seeds

Method:
- Pre
heat oven to 2000C
- Cream together unsalted butter,
Perfect Sweet, lemon rinds and coconut in a mixing bowl until
smoooth (approx 4 min)
- Add egg and mix with spatula
- Stir
in flour and sunflower seeds - DO NOT over mix
- Drop tablespoonfuls of mixture
onto baking paper, leaving enough room for biscuits to spread.
- Flatten slightly with a fork
- Bake at 2000C for 10 minutes
or until browned
- Remove
from oven and allow to cool on tray
